•Preheat fryer to 375°F (190°C).
•Heat oil in a pan over high heat and cook onion for 2 minutes.
•Add the peppers and cook a minute more. Add salt and pepper. Set aside.
•Cook the chicken strips in the fryer and place on a lightly oiled baking sheet.
•Top with the onion/pepper mixture and sprinkle with the grated cheese. Broil in the oven or salamander to melt the cheese.
•Serve with tortilla chips and salsa.
