Mexican Burritos with Pulled Ham

400 g | 14 oz | pulled smoked ham |
6 | 6 | large wheat tortillas |
350 g | 12.3 oz | grated cheddar cheese |
125 g | 4.4 oz | corn kernels, drained |
0.5 | 1/2 | red pepper, cut into strips |
1 | 1 | small onion, chopped |
125 g | 4.4 oz | black beans, drained |
125 ml | 0.5 cup | salsa |
45 mm | 3 tbsp | olive oil |
15 g | 0.5 oz | taco seasoning |
Fresh cilantro, coarsely chopped | ||
Salsa and sour cream as an accompaniment (optional) |
Preparation

Heat a frying pan over high heat with a bit of olive oil, add the chopped onion and cook until caramelized.

Add the pepper strips and cook one more minute, add taco seasoning and ham, mix well, add the salsa and cook another minute, remove from heat and keep warm.

On a work surface, arrange the tortillas then divide the cheese, vegetable mix, ham, corn, black beans and cilantro between them.

Fold in sides and roll tortillas tightly.

Brush with remaining olive oil. Cook on a griddle turning frequently or bake in the oven.

Cut in two and serve with salsa and sour cream on the side.
