Grilled Ham with Maple Caramelized Apples

30 ml | 2 tbsp | olive oil |
3 | 3 | Cortland and/or Granny Smith apples, peeled and quartered |
125 ml | 1/2 cup | maple syrup |
15 ml | 1 tbsp | cider vinegar |
2 ml | 1/2 tsp | cinnamon |
2 ml | 1/2 tsp | ground nutmeg |
1 ml | 1/4 tsp | ground cloves |
65 ml | 1/4 cup | brown sugar |
125 ml | 1/2 cup | chicken stock |
1 | 1 | ham, cooked |
Chopped parsley for garnish |
Preparation
Caramelized apples
- Heat 15 ml butter and 15 ml olive oil in a large frying pan, add the apple quarters and cook, stirring constantly, for two minutes. Add the syrup, vinegar and spices and cook until syrup thickens. Mix together the brown sugar and chicken stock and add to the apples, mixing well. Bring to a boil.
- Lower heat and simmer 15 minutes. Keep warm.
Grilled ham
- Slice ham into 12 even slices.
- Heat a large frying pan over high heat with 15 ml of butter and 15 ml of olive oil, add the ham slices and fry until both side are golden brown.
- Transfer ham slices to a serving platter, add the apples and garnish with chopped parsley when ready to serve.
