2 | 2 | Small baguettes, 25 cm (10 in) long |
1/2 | 1/2 | Small Lebanese cucumber, sliced thin |
30 ml | 2 tbsp | Fresh cilantro leaves |
80 g | 3 oz | Marinated vegetables |
45 ml | 3 tbsp | Mayonnaise |
30 ml | 2 tbsp | Hoisin sauce |
Jalapeño peppers, sliced thin (optional) | ||
Sriracha or other hot sauce (optional) | ||
40 g | 2 oz | Carrots, julienned |
40 g | 2 oz | Daikon radish, julienned |
15 ml | 1 tbsp | Sugar |
15 ml | 1 tbsp | Rice vinegar |
Salt to taste |
Preparation
Marinated vegetables
- In a small bowl, combine the sugar and vinegar
- Add the julienned carrots and daikon along with a pinch of salt. Mix well and refrigerate 1 hour.
Sandwiches
- In a bowl, mix the Hoisin sauce and mayonnaise.
- Spread the interior of the baguettes with the mayonnaise mixture.
- Top with the turkey strips, marinated vegetables, cucumbers, Jalapeño peppers and cilantro.
- Finish with hot sauce.
