450 g | 1 lb | cooked black beans |
225 g | 1/2 lb | corn kernels |
1 | 1 | yellow pepper, diced |
1 | 1 | red pepper, diced |
2 | 2 | tomatoes, diced |
2 | 2 | green onion, thinly sliced |
4 | 4 | garlic cloves, chopped |
125 ml | 1/2 cup | chopped cilantro |
5 ml | 1 tsp | dried oregano |
5 ml | 1 tsp | ground cumin |
- | - | Cayenne pepper, to taste |
60 ml | 1/4 cup | lime juice |
85 ml | 1/3 cup | olive oil |

Preparation
- Mix all the ingredients, except the chicken breasts, and let them macerate in the refrigerator for 30 minutes.
- Fry the chicken breasts until the internal temperature reaches 80°C (175° F).
- Serve the crispy chicken breasts with the black bean salad.
