Penne with Italian Sausages and Vegetables


1 Italian sausage, cooked and sliced
250 ml penne, cooked al dente
50 ml marinara sauce
50 g grated parmesan cheese
0.25 red pepper cut into strips
0.25 mushrooms, chopped
0.25 onion, chopped
15 ml olive oil
salt and freshly ground black pepper
250 ml fresh basil leaves


•In a pan, heat oil over high heat and cook onion for 2 minutes. 
•Add the pepper, zucchini and sausage and cook another minute. Add salt and pepper. 
•Add the penne and sauce. Mix well and heat through. 
•Spoon into a pasta bowl, top with cheese and chopped basil.
•Serve immediately
