Hot Turkey Sandwich


85 g cooked Olymel turkey roast, in pieces sliced
2 slices bread, your choice
85 ml turkey or other gravy
100 g sweet potato oven fries
50 g green peas
250 g peeled sweet potatoes, cut into sticks
7 ml olive oil
salt and pepper


Sweet Potato Oven Fries
•Preheat oven to 375°F (190°C).
•In a bowl, toss the potato sticks with olive oil, salt and pepper.
•Place sweet potato cubes on a baking sheet covered with parchment paper.  Bake for about 30 minutes or until tender. Keep warm.
•Reheat the turkey slices, green peas and gravy.
•Place one slice of bread on a plate, top with turkey slices and a bit of gravy. 
•Cover with the second slice of bread and remaining gravy. 
•Serve with the green peas and sweet potato fries.
