Hot Turkey Sandwich

85 g | cooked Olymel turkey roast, in pieces sliced | |
2 | slices bread, your choice | |
85 ml | turkey or other gravy | |
100 g | sweet potato oven fries | |
50 g | green peas | |
250 g | peeled sweet potatoes, cut into sticks | |
7 ml | olive oil | |
salt and pepper |
Preparation
•Sweet Potato Oven Fries
•Preheat oven to 375°F (190°C).
•In a bowl, toss the potato sticks with olive oil, salt and pepper.
•Place sweet potato cubes on a baking sheet covered with parchment paper. Bake for about 30 minutes or until tender. Keep warm.
•Sandwich
•Reheat the turkey slices, green peas and gravy.
•Place one slice of bread on a plate, top with turkey slices and a bit of gravy.
•Cover with the second slice of bread and remaining gravy.
•Serve with the green peas and sweet potato fries.
