2.5 l | 0.66 gal | pineapple chunks drained, and juice reserved |

Sweet and Sour Sauce | ||
1.25 l | .33 gal | pineapple juice drained from can |
750 ml | 26 oz | apple cider vinegar |
300 ml | 10.5 oz | maple syrup |
300 mm | 10.5 oz | ketchup |
15 | 15 | garlic cloves finely chopped |
300 ml | 10.5 | organic corn starch dissolved in water |
Salt to taste |
Preparation
Sauce:
- In a large pot on high heat combine all the ingredients except the dissolved corn starch
- Bring to a boiled mixing with a whisk add the dissolved corn starch. Bring to a boiled and simmer for two minutes. Reserved.
Chicken:
- In a in a tilting braising pan skillet or very large pot over high heat cooked the onions with the olive oil for two minutes, add the pineapple cooked until caramelized add the diced chicken cooked for two more minutes.
- Add the sauce, bring to a boil finish with the diced peppers and served over steamed rice or cauliflower rice.
