Healthy Sweet & Sour Chicken


7.5 16 lb Olymel fully cooked chicken thighs cut in pieces
2.5 l 0.66 gal pineapple chunks drained, and juice reserved
5 5 red bell peppers diced
5 5 green peppers diced
10 10 onions diced
125 mm 4.39 oz Olive oil
Sweet and Sour Sauce
1.25 l .33 gal pineapple juice drained from can
750 ml 26 oz apple cider vinegar
300 ml 10.5 oz maple syrup
300 mm 10.5 oz ketchup
15 15 garlic cloves finely chopped
300 ml 10.5 organic corn starch dissolved in water
Salt to taste



  1. In a large pot on high heat combine all the ingredients except the dissolved corn starch
  2. Bring to a boiled mixing with a whisk add the dissolved corn starch. Bring to a boiled and simmer for two minutes. Reserved.


  1. In a in a tilting braising pan skillet or very large pot over high heat cooked the onions with the olive oil for two minutes, add  the pineapple cooked until caramelized add the diced chicken cooked for two more minutes.
  2. Add the sauce, bring to a boil finish with the diced peppers and served over steamed rice or cauliflower rice.
