Healthy Cobb Salad

75 | 75 | Olymel fully bacon, cut into thirds |
10 | 10 | heads romaine, roughly chopped |
50 | 50 | small red tomatoes, cut into wedges |
10 | 10 | avocados, halved, seeded, peeled and sliced |
3 | 3 | Juice of lemons |
4 | 4 | red onion, thinly sliced |
10 | 10 | cups of corn kernels |
75 | 75 | soft boiled eggs, peeled and sliced |
Honey Dijon vinaigrette | ||
1.25 l | 0.33 | extra virgin olive oil |
400 ml | 14 oz | white wine vinegar |
225 ml | 7.9 oz | Dijon mustard |
225 ml | 7.9 | honey |
Salt and freshly ground black pepper, to taste |
Preparation
Vinaigrette:
- Combine all vinaigrette ingredient in a bowl. Whisk until blended
- Reserve
Salad:
- Slice the avocado and combine in a bowl with the lemon juice, Reserve.
- Dressed the romaine in serving bowl, add the desire amount of vinaigrette.
- Top with all other ingredients. Serve.
