Ham, arugula, pear and endive salad

1 | 1 | cup arugula lettuce |
1 | 1 | endive, separated |
0,25 | 0,25 | radicchio lettuce, coarsely chopped |
0,5 | 0,5 | pear, seeded and sliced |
2,5 ml | 0,5 tsp | lemon juice |
30 ml | 2 tbsp | vinaigrette |
15 ml | 1 tbsp | chopped chives |
Salt and fresh ground pepper |
Preparation
Vinaigrette
- In a bowl whisk together all ingredients. Adjust seasoning and set aside.
Salad
- Combine the pear slices with the lemon juice and toss well.
- Compose the salad starting with the arugula, endive spears, radicchio, pears and ham.
- Sprinkle with the vinaigrette and garnish with chives.
- Serve immediately.
Tips
Vinaigrette: (125 ml)
- 65 ml (¼ cup) olive or canola oil
- 30 ml (2 tbsp.) balsamic vinegar
- 15 ml (1 tbsp.) maple syrup
- 15 ml (1 tbsp.) Dijon mustard
- 1 clove garlic, finely chopped
- Lemon juice
- Salt and pepper
