Grilled Pork Loin Medallions with Herbs


1 1 Olymel pork loin
30 ml 2 tbsp olive oil
4 4 cloves garlic, finely chopped
30 ml 2 tbsp fresh parsley, chopped
30 ml 2 tbsp fresh thyme, chopped
30 ml 2 tbsp fresh rosemary, chopped
15 ml 1 tbsp smoked or regular paprika
Salt and freshly ground black pepper, to taste


  1. Preheat BBQ to medium high.
  2. In a small bowl, combine the olive oil, garlic parsley, thyme, rosemary and paprika. Add salt and pepper to taste.
  3. Brush the pork medallions with the herb/oil mixture making sure they are well coated.
  4. Place medallions on grill and cook 4 to 5 minutes on each side until well browned and internal temperature reaches about 70°C.
  5. Remove medallions from heat and let rest a few minutes before serving.
  6. Serve the grilled pork medallions with herbs and the side dishes of your choice, such as grilled vegetables, a green salad and/or roasted potatoes.
