Chicken breast with fine herbs wrapped in bacon

400 g 0.88 lb Low-injection bacon #92764/92765
6 6 Boneless, skinless chicken breasts
60 ml 0.25 cup Softened salted butter
3 3 Cloves of garlic, finely chopped
45 ml 3 tbsp Chopped parsley
5 ml 1 tsp Fresh chopped thyme
2.5 ml 0.5 tsp Chopped rosemary
Ground salt and pepper, to taste


  • Preheat oven to 375°F (190°C).
  • In a bowl, mix together the butter, the garlic, the parsley and the rosemary.
  • Spread out two strips of bacon on a work surface. Place a chicken breast on the bacon strips, basted with the softened butter and fine herbs. With the chicken breast firmly wrapped in the bacon, place in an oven-proof dish. Do the same for each chicken breast.
  • Cook for 20 – 25 minutes until chicken reaches an internal temperature of 176°F (80°C).

        Serve accompanied by a salad or vegetables of your choice.
