California Salad with Turkey Cubes

500 ml | 2 cup | Mixed lettuce |

6 | 6 | Strawberries, halved |
500 ml | 2 cup | Spring mix lettuce |
60 ml | 1/4 cup | Leaf radicchio |
30 ml | 2 tbsp | Pecan halves (optional) |
1 | 1 | Dried shallot, chopped fine |
30 ml | 2 tbsp | Olive oil |
5 mm | 1 tsp | Dijon mustard |
15 ml | 1 tbsp | Orange juice |
15 mm | 1 tbsp | Lemon juice |
30 ml | 2 tbsp | White wine vinegar |
Preparation
Vinaigrette: In a bowl, combine the shallots and mustard. Season to taste. Whisk in oil gradually. Finish with the vinegar, orange juice and lemon juice. Set aside.
In a bowl combine the lettuce, radicchio, strawberries, orange segments and pecans. Arrange in a flared salad bowl, add the vinaigrette.
Garnish with the turkey cubes and serve immediately.
Tips
Toast the pecans in a pan or in the oven to enhance their flavour.
