California Citrus Ham Salad

500 ml | 2 cup | mesclun lettuce |
150 g | 5 1/2 oz | ham, julienned |
30 ml | 2 tbsp | pecan halves (optional) |
0.25 | 1/4 | orange, in segments |
30 ml | 2 tbsp | pomegranate seeds |
1 | 1 | dry shallot, minced |
7 ml | 1 tbsp | Dijon mustard |
30 ml | 2 tbsp | olive oil |
15 ml | 1 tbsp | wine vinegar |
15 ml | 1 tbsp | orange juice |
15 ml | 1 tbsp | lemon juice |
Preparation
- Vinaigrette: In a bowl, combine the shallots and mustard. Add salt and pepper to taste. Whisk in oil gradually. Finish with the vinegar, orange juice and lemon juice. Set aside.
- In a bowl combine the lettuce, ham and pecans.
- Transfer to a salad bowl and dress with the vinaigrette.
- Garnish with the orange segments and pomegranate seeds.
- Serve immediately.
