Olymel california chicken salad


2 kg 4.4 lb Olymel fully cooked chicken cubes
690 g 3 cup light mayonnaise
125 ml 1/2 cup lime juice
5 5 fresh, small chili peppers, finely chopped
500 ml 2 cup sunflower seeds
4 4 mangoes, peeled and diced
- - Greens of your choice (spinach, mesclun, arugula, etc.)
- - Salt and pepper


  • In a large bowl, mix the mayonnaise, the lime juice and the peppers.
  • Add the sunflower seeds and the mango cubes. Add salt and pepper and mix well.
  • Incorporate the chicken cubes and serve on a bed of greens.
  • You can also use this chicken salad as a filling for sandwiches.
