California chicken salad

690 g | 3 cup | light mayonnaise |
125 ml | 1/2 cup | lime juice |
5 | 5 | fresh, small chili peppers, finely chopped |
500 ml | 2 cup | sunflower seeds |
4 | 4 | mangoes, peeled and diced |
- | - | Greens of your choice (spinach, mesclun, arugula, etc.) |
- | - | Salt and pepper |
Preparation
- In a large bowl, mix the mayonnaise, the lime juice and the peppers.
- Add the sunflower seeds and the mango cubes. Add salt and pepper and mix well.
- Incorporate the chicken cubes and serve on a bed of greens.
- You can also use this chicken salad as a filling for sandwiches.
