Bânh Mi Baguettes with Chicken

450 g | 1 lb | fully cooked Premium chicken strips |
85 ml | 1/3 cup | hoisin sauce |
30 ml | 2 tbsp | sugar |
15 ml | 1 tbsp | rice vinegar |
15 ml | 1 tbsp | garlic purée |
2 | 2 | baguettes, cut in 3 (or 6 baguettines) |
30 ml | 2 tbsp | vegetable oil |
6 | 6 | lettuce leaves, of your choice |
2 | 2 | grated carrots |
1/2 | 1/2 | English cucumber, cut into thin strips |
125 ml | 1/2 cup | coriander leaves |
Preparation
- Mix the hoisin sauce with the sugar, the rice vinegar, the garlic purée and put aside.
- Preheat the oven grill.
- Cut the baguette sections in two along the side and place them on a baking sheet.
- Baste the inside of the baguettes with the oil and put under grill until they are slightly coloured. Remove.
- Baste the inside of the baguettes with half of the sauce, add a lettuce leaf, then garnish with grated carrots and cucumber strips.
- Add the chicken strips, sprinkle with the rest of the sauce and garnish with coriander leaves.
