Bacon and cheese bundles

100 g | 3 1/2 oz | fully cooked bacon pieces |
375 g | 1 1/2 cup | fresh goat cheese, crumbled |
30 ml | 2 tbsp | pesto |
5 ml | 1 tsp | dried thyme |
10 | 10 | sheets of filo pastry |
250 ml | 1 cup | clarified butter |
Preparation
- In a round-bottom bowl, mix the cheese with the pesto, until it achieves a soft and homogeneous texture.
- Add the bacon and the pepper. Mix well.
- Cover your working surface with a sheet of parchment paper. Butter lightly.
- Put a sheet of filo pastry on the parchment paper and baste the entire surface with clarified butter. Repeat the operation until you have 5 sheets on top of each other.
- Cut the rectangle into 12 equal squares. Place 1 tablespoon of the mix in the centre of each square. Bring the points towards the centre, while pressing firmly so that they stay in place.
- Put the bundles on a baking sheet lined with parchment paper and brush with melted butter. Remove and refrigerate for at least 15 minutes.
- Repeat the process with the rest of the filo sheets and the mix.
- Preheat the oven to 200° C (400° F).
- Bake the bundles for 12 – 15 minutes or until they are golden brown.
- Serve warm.
