Bacon and cheese bundles

100 g 3 1/2 oz fully cooked bacon pieces
375 g 1 1/2 cup fresh goat cheese, crumbled
30 ml 2 tbsp pesto
5 ml 1 tsp dried thyme
10 10 sheets of filo pastry
250 ml 1 cup clarified butter

Preparation

  • In a round-bottom bowl, mix the cheese with the pesto, until it achieves a soft and homogeneous texture.
  • Add the bacon and the pepper. Mix well.
  • Cover your working surface with a sheet of parchment paper. Butter lightly.
  • Put a sheet of filo pastry on the parchment paper and baste the entire surface with clarified butter. Repeat the operation until you have 5 sheets on top of each other.
  • Cut the rectangle into 12 equal squares. Place 1 tablespoon of the mix in the centre of each square. Bring the points towards the centre, while pressing firmly so that they stay in place.
  • Put the bundles on a baking sheet lined with parchment paper and brush with melted butter. Remove and refrigerate for at least 15 minutes.
  • Repeat the process with the rest of the filo sheets and the mix.
  • Preheat the oven to 200° C (400° F).
  • Bake the bundles for 12 – 15 minutes or until they are golden brown.
  • Serve warm.
